Souffles are crunchy and light biscuits from the southwest of France. It was in the 17th century that a hotelier had the idea of combining almonds with sugar and egg whites. This combination allows the biscuit to have a soufflé appearance when cooked.
La Sablésienne makes two soufflé recipes: almond and hazelnut.
They are made with flour, sugar, egg white, to which we add flaked almonds or crushed hazelnuts which give a roasted taste. Our soufflés are made in our biscuit factory and collected by hand to preserve their quality.
