Nougat, a confection made from sugar, honey, egg whites and nuts, has origins dating back centuries and spanning different Mediterranean cultures.

Nougat has its roots in similar confections from the Mediterranean region, particularly in Persia and Arab countries, where versions of this type of sweet existed since ancient times. Nougat is said to have been introduced to France in the 16th century by navigators and merchants who brought back recipes and confectionery techniques from the Mediterranean regions.

Nougat, with its expensive ingredients like honey and almonds, was a symbol of wealth and luxury, perfectly in tune with the French art of living of the time.
It is therefore quite natural that it found its place at the court of Louis XIV among the many delicacies served during sumptuous royal banquets.
It was during this time that Louis XIV established systems to regulate trades and products, ensuring a high quality and standard for French crafts. With royal support, Montélimar became famous for its nougat production in the 17th century.
